Gochujang Cauliflower Tacos

GOCHUJANG CAULIFLOWER TACOS😍

Few things bring me more joy than a delicious taco, but one that’s delicious, meatless, AND requires less than 5 minutes of hands on time makes me feel like I’ve won the lottery. You’re gonna love this sweet/spicy/tangy combo!



Serves 2.

Ingredients:

For the Korean Inspired Cauliflower Tacos:

  • 1 head cauliflower, broken into small florets

  • ½ cup gochujang (I like Chung Jung One brand, it can be found easily at Vons or any major grocery chain)

  • 1 tbsp coconut aminos (or soy sauce)

  • 1 tbsp honey

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1-2 tsps chile garlic sauce (I love Huy Fong)

  • 2 cloves minced garlic

  • 1 tsp grated ginger

  • Salt to taste

For Serving:

  • 4 tortillas (Use Siete Foods tortillas to keep this paleo)

  • Green onions for topping

  • Slaw to serve (optional)



Directions:

For the Gochujang Cauliflower Tacos:

  • Add all ingredients to a large ziploc bag and mix until every cauliflower floret is coated with the sauce.

  • Roast on a greased baking sheet at 450 degrees for 25-30 minutes.

  • Toast the tortillas in a little avocado oil to crisp up a bit.

  • Top the tortillas with cauliflower, green onions, and slaw. Enjoy!
