Crunchy Sweet Potato Tater Tots

If you’re as big of a tot fan as me, you’re gonna wanna make these ASAP 😋 Probably my FAVORITE SuperBowl Recipe yet, these babies will be gone before you can even take a picture 🏈 and THE SAUCE is so delicious, so packed with flavor, I’m gonna be drizzling it on everything for weeks 😍

Ingredients:

For the Sweet Potato Tots:

2-3 sweet potatoes

1-2 tbsp butter

½ cup Parmesan cheese + ¼ cup for the coating

1 tsp salt

1 tsp pepper

2 cups sweet potato chips

For the Maple Chipotle Tahini Sauce:

½ cup tahini

4-6 tbsps maple syrup

4-6 tbsps adobo sauce (from a can of chipotle peppers)


Directions:

For the Sweet Potato Tots:

  • Place a cup of water in your Instant Pot.

  • Scrub 2-3 sweet potatoes and place them on the wire rack inside.

  • Lock the lid and set to seal and cook on high pressure for 15 minutes, allowing for 10 minute natural release before opening the lid. (You can also bake these at 400 degrees for about 50 minutes).

  • Once cooled a bit, peel and mash the sweet potatoes in a bowl with the butter, salt, pepper, and half a cup of Parmesan cheese.

  • For the coating, crush about 2 cups of sweet potato chips with about ¼ cup parm and some salt.

  • Preheat oven to 400 degrees and start forming the sweet potato mixture into tot size. It’s gonna be a bit wet, that’s okay, the crumbs will help hold its shape.

  • Transfer to the crushed chips and coat.

  • Continue shaping tots and place on a wire rack.

  • Bake at 400 degrees for about 30 minutes, flipping halfway.

For the Chipotle Maple Tahini Sauce:

  • Mix together the tahini, maple syrup, and adobo sauce.

  • Taste as you go to your preference.
