Sundays I am either in a cook all day for a delicious Sunday dinner or takeout mood and thereâs no in between. Enter the most delicious, better than takeout, PAD SEE EW to satisfy both moodsđ My obsession with Pad Thai is borderline unhealthy, which means every time I go to a Thai restaurant, itâs hard to choose anything else. The first time I had Pad See Ew was about 6 years ago and it blew my mind I had wasted so many years of my life missing out on something so delicious. Once I realized how easy it was to make at home, it was a game changer because I no longer felt like Sophieâs choice opening up a menu at a Thai restaurant. Youâre gonna wanna make this one ASAP đ
Notes:
Although this recipe requires very few ingredients, you will need to navigate to your Asian grocer to find most of the items below. Some things you can find on Amazon, but you really want to stick with the fresh rice noodles and gai lan to make this recipe extra special.
When cooking on high heat in a wok or similar pan, everything gets cooked really fast, so be sure to prep all your ingredients ahead of time!
Ingredients:
For the Pad See Ew:
¾ package of fresh wide rice noodles (about 10oz) - can sub for dried stick noodles in a bind
1 lb ribeye or skirt steak
1 lb gai lan (chinese broccoli)
1 minced garlic clove
2 eggs whisked
1 tbsp neutral oil
For the Pad See Ew Sauce:
1 tbsp soy sauce
1 tbsp oyster sauce
2 tbsps sweet soy sauce
1 tbsp dark soy sauce (can sub for regular but flavor wonât be quite as strong)
Directions:
For the Pad See Ew:
Prep all your protein and veggies first as everything cooks very quickly.
Slice your steak into strips.
Cut your broccoli intro strips on a bias (diagonally).
Make your Pad See Ew sauce by mixing soy sauce, dark soy sauce, oyster sauce, and sweet soy sauce.
Get a wok, or a large frying pan with high, sloping sides nice and hot. Add in the avocado or neutral oil and add the steak in a single layer. Season with salt and pepper and cook for 1 minute per side on high heat.
Remove the steak from the pan and set aside.
Add the stems of the gai lan to the wok and cook for 1-2 minutes before adding the leaves and garlic.
Stir until just wilted, about 1 minute, then add in the fresh wide rice noodles.
Add the Pad See Ew sauce to the noodles and stir.
Crack 2 eggs into a bowl and whisk.
Move the noodles and broccoli to the side of the pan and add the eggs, stirring until just almost cooked, and then fold in the noodles.
Add back in the steak with its juices and serve!đ
