Then look no further than this PERFECT Filet Mignon thatā€™s done in 15 minutes šŸ˜ seriously, I feel like I should have a Geico catchphrase with how easy this is to make!

Ingredients:

For the Filet Mignon:

  • 2 filet mignon steaks

  • 2-3 tbsps cold butter

  • 3 cloves garlic (unpeeled)

  • Few sprigs of rosemary and thyme

  • 1 tbsp high smoke point oil (avocado or vegetable)

Instructions:

For the Filet Mignon Steak:

  • Get a cast iron nice and hot.

  • Drizzle some neutral oil with a high smoke point (avocado oil, vegetable oil, etc.) into the pan until almost smoking.

  • Season your filets with salt and pepper.

  • Place into the oil, making sure you hear that sizzle sound when the steak hits the pan.

  • Sear on high for 5-7 minutes until you get that great crust, and flip searing the other side for about 5 minutes (depending on thickness of the steak). [For thinner steaks, sear for 2-3 minutes per side]

  • With 2 minutes to go, throw in butter, garlic, and rosemary and thyme.

  • Turn off the heat and baste the steaks with the butter for about 1 minute, placing the herbs and garlic on top of the steak while doing so.

  • Take the steaks off the heat and let rest on a wire rack for about 5 minutes.
