Spaghetti Squash Shrimp Scampi:
So my diet has been a little all over the place lately (I blame my Instagram feed and Girl Scouts of America) so Iโm definitely trying to get back on track this week by adding recipes to my weekly rotation that are focused around proteins and veggies, starting with Healthified SPAGHETTI SQUASH SHRIMP SCAMPI ๐ so flavorful, youโll forget itโs not actually served on a bed of pasta ๐
Ingredients:
For the Spaghetti Squash:
1 medium sized spaghetti squash (2-3 lbs)
1 tbsp olive oil
Salt and pepper
For the Shrimp Scampi:
½ lb peeled and deveined shrimp
Handful of green beans (about ¼ lb)
1 shallot chopped
3 garlic cloves chopped
1-2 tbsps ghee or coconut oil
1 cup white wine
1 cup chicken stock
1 cup parmesan cheese (optional if doing whole30)
Directions:
For the Spaghetti Squash:
Preheat your oven to 350 degrees and cut your squash in half (hot dog style).
Drizzle with olive oil and season with salt and pepper.
Place skin side up on a baking sheet and bake for 30-35 minutes depending on the size of your squash.
Once done, shred with a fork and set aside.
For the Spaghetti Squash Shrimp Scampi:
Get a cast iron nice and hot and add in some ghee or coconut oil.
Sear shrimp for about 1-2 minutes each side and season with s+p.
Remove from pan.
Add in a handful of chopped green beans and cook until blistered. Remove from pan.
Add in a bit more ghee and sauté shallot and garlic until translucent.
Carefully add in wine on high heat and reduce down until alcohol has evaporated.
Add in chicken stock and stir until it starts to thicken up.
Add in parm (omit if doing @whole30) and stir.
Add back in the squash, shrimp, and green beans and serve!
So delicious, and so easy for meal prep of quick weeknight meals, especially if you can cook the squash ahead of time ๐
