Jerk Tilapia with Air Fryer Tostones

WHOLE30 Jerk Tilapia with Air Fryer Tostones

Whole30 Jerk Tilapia with AIR FRYER TOSTONES (Plantain Chips)‼️ My oh my where do I even start with this recipe! Not only are the air fryer tostones one of the most delicious things that have ever come out of my air fryer, but they’re Whole 30 approved! And the TILAPIA 😫 how I never put jerk marinade on fish before I will never know but I’m so glad I did. This meal is DYNAMITE and you gotta make it ASAP🔥


Ingredients:

For the Jerk Marinade:

  • 6-7 scallions (greens and whites)

  • A whole head of garlic peeled

  • 1 2” piece of ginger peeled and roughly chopped

  • 4 scotch bonnet peppers or habaneros

  • 2 shallots peeled and quartered

  • 2 tbsps allspice

  • The juice and zest of 2 limes (I added one more lime after tasting)

  • 2 tbsps soy sauce (or coconut aminos if doing Whole30)

  • 1 tbsp apple cider vinegar

  • 1/2 cup neutral oil (I used vegetable oil)

  • A few sprigs of thyme

  • 2 tbsps brown sugar (omit if doing Whole30)

  • Salt and pepper to taste

For the Jerk Tilapia:

  • 2 filets fresh Tilapia

  • Cedar wraps for grilling (optional)

For the Air Fryer Tostones (Plantain Chips):

  • 2 plantains

  • Olive oil spray (you can also just use olive oil and a blush)

  • Salt

Optional Sides:

  • Mashed avocado with some lime juice and smoked sea salt

  • Fresh mango with lime juice, cilantro, and salt


Directions:

For the Jerk Marinade:

  • Blend together scallions, garlic, ginger, scotch bonnet peppers or habaneros, allspice, shallots, lime juice and zest, soy sauce, apple cider vinegar, oil, thyme, brown sugar, and salt and pepper to taste (a lot of ingredients I know but trust me)

  • Taste as you go to adjust per your preference!

For the Jerk Tilapia:

  • Marinate the fish in the jerk marinade at least 2 hours, overnight preferable.

  • If you are grilling, use a grill mat or a cedar plank to ensure the fish stays intact and grill for about 5 minutes each side.

  • If you are cooking in the oven, bake at 350 degrees for 10-12 minutes


For the Air Fryer Tostones (Plantain Chips):

  • Cut the ends off your plantains.

  • Cut into 1” pieces and peel by making a slit with a knife and peeling off the skin (video in highlights on my Instagram page!).

  • Spray with olive oil and air fry at 400 degrees for 6 minutes.

  • Take out of the air fryer while still hot and smash down with the bottom of a glass.

  • Spray with olive oil and season generously with salt on both sides.

  • Air fry at 400 for 5 min each side.


And you’re done! Serve with some smashed avocado, lime wedge, and mango salsa 😋😋
