Buffalo Cauliflower "Wings"

I can’t even begin to express the joy I felt biting into one of these babies. Equal parts crispy, spicy, and creamy, just as you would hope from a buffalo wing dipped in ranch. I’m not saying it tastes like chicken, but if it can satisfy a buffalo wing craving AND make me feel great after, I’m all for it 🏈

Ingredients:

For the Buffalo Cauliflower Wings:

  • 1 cauliflower head, broken into bite sized florets

  • 1 cup flower

  • 4-5 cups crushed corn flakes

  • 2 eggs

  • 1 tsp salt and pepper

  • 1 tsp garlic powder

  • ½ tsp smoked paprika

  • 1/2 -1 cup Red Hot (or your favorite buffalo sauce)

  • 2 tbsp butter or coconut oil

For the Healthy Ranch:

  • 1 cup plain greek yogurt

  • Few Sprigs of Parsley, Dill and Green Onion

  • 1 tsp onion salt (I like the Trader Joe’s Onion Salt)

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • About ¼ cup milk or milk alternative (depending on your consistency preference)

For the Buffalo Cauliflower Wings:

  1. Crush corn flakes in a ziploc and mix into a bowl with salt, pepper, garlic powder and smoked paprika.

  2. In a separate bowl, beat 2 eggs.

  3. Separate cauliflower into individual florets and place in a ziploc with one cup flour. Shake to coat.

  4. Preheat oven to 400 degrees and start dredging!

  5. Grab each cauliflower floret and shake off any excess flour.

  6. Place into the egg mixture to coat.

  7. Transfer to corn flake crumbs and coat.

  8. Transfer to a baking sheet (wire rack preferred for extra crispiness).

  9. Continue the dredging process until all cauliflower are coated.

  10. Bake for 20-25 minutes until crispy and cooked through.

  11. Meanwhile, heat up half a cup of red hot and 2 tbsps of either butter or coconut oil.

  12. Drizzle on the sauce right before serving.

For the Healthified Ranch:

  1. Chop a few sprigs of parsley, dill, and green onion.

  2. Mix into one cup of plain greek yogurt and season with onion salt, pepper, and garlic powder.

  3. Add in milk and mix until desired consistency is reached.

  4. Let set in the fridge for at least 20 minutes

  5. Serve and watch it be devoured by vegetarians and meat lovers alike 😋
