Healthified Kale and Artichoke Dip

First up for SuperBowl week: Healthified Kale and Artichoke dip!! 🏈 Proof that making something healthy doesn’t mean you have to skimp out on flavor πŸ˜‹

Ingredients:

  • 2 chopped shallots

  • 3 minced garlic cloves

For the dip:

Sauté 2 shallots and 3 garlic cloves in some olive oil until slightly golden. Add a few big handfuls of kale and wilt down. Preheat oven to 425 degrees. Meanwhile, mix the kale mix, 2 cups of chopped artichokes (I used @traderjoes frozen artichokes and defrosted them), an 8 oz package of light cream cheese, half a cup or so of plain Greek yogurt, 1 chopped green onion, 1/4 cup of Parmesan cheese, and some salt, pepper, garlic powder, onion powder, and a pinch of cayenne. Mix and sprinkle with some grated goat cheese (optional). Bake at 425 uncovered for 25-30 min and devour! Tastes great with pita chips and veggies to keep it extra healthy πŸ˜‹
