Whole 30 Buffalo Chicken Stuffed Sweet Potatoes with Ranch

BUFFALO CHICKEN STUFFED SWEET POTATOES WITH RANCH😍

A meal prep friendly meal that’s just as nice as it is naughty. I know, a title like that doesn’t seem like it should be whole30 approved but it is. It gives you all the feels of downing buffalo wings at a pub but still keeps you on track for that summer bod you’ve been working hard for - double win. You’re gonna wanna make this one ASAP😋


Serves 4-5.

Ingredients:

For the Homemade Mayo:

  • 1 room temperature egg

  • 1 cup lightly flavored oil (light olive oil, avocado oil, vegetable or canola)

  • ½ tsp salt

  • Juice from 1 lemon

For the Whole30 Ranch:

  • 1 cup homemade mayo or whole 30 approved mayo

  • ¼-½ cup almond milk or coconut beverage (depending on how thick you like your ranch)

  • ½ tsp dried parsley

  • ½ tsp dried dill

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Pinch of cayenne (optional)

For the Buffalo Chicken Sweet Potatoes:

  • 4 sweet potatoes

  • 4-5 chicken thighs

  • 1 cup whole 30 compliant buffalo sauce (I like The New Primal)

  • 1 tsp garlic powder

  • ½ tsp black pepper


Directions:

For the Buffalo Chicken Sweet Potatoes:

  • Start by adding chicken thighs, buffalo sauce, garlic powder and black pepper to a crockpot and set on high for 4 hours or low for 8.

  • Meanwhile, scrub your sweet potatoes and prick all over with a fork. Place on a aluminum foil lined baking sheet and bake for 50-55 minutes at 400 degrees.

  • While those are cooking, start on your ranch.

  • In a wide mouth mason jar, add in a room temperature egg. Then add the oil, lemon juice, and salt.

  • Stick your immersion blender directly over the egg yolk and turn it on. Keep it there for 10-15 seconds until you start to see the mayo form at the bottom and the color starts turning a light cream color. Slowly raise the immersion blender little by little - do not go too fast at this step or it will not emulsify and you will not have thick mayo (full video on instagram highlights). Once almost the whole jar has gotten to a thick consistency, continue raising and lowering the blender until everything is fully incorporated.

  • **If you do not have an immersion blender, you can use a regular blender. Add all ingredients except the oil, and while the motor is running on low, super slowly stream in the oil until thick and emulsified.

For the Whole 30 Ranch:

  • In a mason jar or bowl, whisk together homemade or compliant mayo, non-dairy milk, parsley, dill, garlic powder, onion powder, and cayenne until fully incorporated. Add the milk little by little until you reach the consistency you like.

For the Buffalo Chicken Sweet Potatoes:

  • Once the chicken is cooked, remove the chicken onto a cutting board and shred with two forks. Transfer back to the sauce and mix together.

  • Cut slits in the sweet potatoes and fill with the shredded buffalo chicken. Drizzle with ranch and serve😋
