Chicken Drumsticks with Tarragon White BBQ Sauce

CHICKEN DRUMSTICKS WITH TARRAGON WHITE BBQ SAUCE😍


This super simple meal comes together in almost no time and packs a major flavor punch! I know grilling can be intimidating sometimes, but using drumsticks makes it super easy to ensure the chicken is not overcooked. Dust the cobwebs off your grill and you can have this delicious grilled chicken on your table in 30 minutes (sub corn for zucchini to make this a Whole30 meal)! 😋
Serves 4.

Ingredients:

For the Alabama White BBQ Sauce:

  • 1 cup mayo (homemade or store bought) - for step by step instructions on how to make mayo, check out my post: https://www.rockinmealss.com/blog/2019/5/21/homemade-mayonnaise

  • 2 tbsps apple cider vinegar

  • 3-4 sprigs of fresh tarragon, chopped

  • A handful of fresh chopped chives

  • 1 tsp garlic powder

  • ¼-½ tsp cayenne

  • Salt and pepper

For the BBQ Chicken:

  • 6-8 Chicken drumsticks (about 2 per person)

  • ¼ cup avocado oil

  • 1-2 tbsps poultry seasoning (you can also use a blend of sage, rosemary, garlic powder, and black pepper)

  • Salt

  • 3-4 ears of corn (or zucchini if on Whole 30)

For the Cauliflower Mash:

  • 2-3 cups cauliflower rice

  • 1 tbsp ghee

  • ¼ -½ cup chicken or vegetable broth

  • Salt and pepper


Directions:

  • Start by taking out your drumsticks and toss with avocado oil and poultry seasoning. Let them bring up to room temperature while they marinate for about 20 minutes.

  • Meanwhile, work on your Alabama BBQ sauce by mixing together the mayo, apple cider vinegar, tarragon, chives, garlic powder, cayenne, and a pinch of salt.

  • For the cauliflower mash, melt some ghee in a skillet. Add in the riced cauliflower, season with salt and pepper, and saute on high for 3-5 minutes until you start to see some color.

  • Slowly start adding in the broth a little at a time, scraping up the browned bits on the pan. Once most of the broth has been absorbed and the cauliflower is soft, mash with a fork for a chunky texture or transfer to a blender or use an immersion blender for a smoother texture. Taste and adjust any seasonings.

  • Preheat your grill to medium high heat (about 375 degrees). Salt the chicken, oil your grates, and add the chicken to direct heat. Cook for 15 minutes with the lid closed and then flip and cook for 10 minutes more (add corn or zucchini at the first flip if using). You can also broil these in the oven for 10 minutes per side if you don’t have a grill. Let rest 5-10 and serve!
