CHICKEN SATAY NOODLE BOWL😍

If you’re looking for ways to spruce up your sad desk lunch, you’ve hit the jackpot. Perfect for a quick dinner or for an easy lunch tomorrow, this Chicken Satay inspired noodle bowl is ready in 10 minutes and is the perfect way to use up extra rotisserie chicken. It’s the noodle bowl of your dreams (high praise I know, but I swear it delivers right on the money)🙌🏽 you gotta make this🤤


Serves 2-3.

Ingredients:

For the Chicken Satay Noodle Bowl:

  • 2-3 cups rotisserie chicken

  • 8oz noodles (I used brown rice Pad Thai noodles to make this gluten-free, but you can use any noodles)

  • 2 cups shredded carrots

  • 2 cups shredded cucumber

  • ½ cup peanut butter

  • 1/4 - ½ cup coconut beverage (not the coconut milk from a can)

  • Juice from 1 lime

  • 2 tbsps hoisin sauce

  • 2 tbsps soy sauce

  • 2 tbsps fish sauce (optional)

  • 1-2 tbsps sriracha

  • Peanuts, cilantro, and lime wedges for serving


Directions:

For the Chicken Satay Noodle Bowl:

  • Start by bringing a pot of water up to boil. Add your noodles and cook to package instructions.

  • In a large bowl, combine the peanut butter, coconut milk, lime juice, hoisin sauce, soy sauce, fish sauce, and sriracha. Add water until the sauce resembles a consistency a bit thinner than pancake batter.

  • Add the shredded chicken, carrots, cucumbers and cooked noodles and stir to combine. Serve at room temperature and enjoy!😋
