Lu's Potato Salad

LU’S POTATO SALAD😍

Be the hero of your 4th of July potluck with my godmother’s recipe (well, almost, it’s never actually been written down and tastes slightly different each time you make it). This is the best potato salad you’ll ever have, and trust me, once you try it you will never buy another store bought potato salad again🙌🏽

Make this Whole 30 by substituting Lawry’s with other seasonings that don’t have sugar.

Makes 4-6 servings.

Ingredients:

For Perfect Potato Salad:

  • 3 lbs red potatoes

  • 1 cup mayo

  • 1/3 cup pickle juice 

  • 1 1/2 tsps @lawrys seasoning salt

  • 1/2 red onion

  • 3 pickle spears

  • 3 hard boiled eggs

  • 2 tbsps yellow mustard

  • Salt to taste


Directions:

For the Best Potato Salad:

  • Add your whole potatoes to a large pot and cover with cold water and a large pinch of salt. 

  • Bring up to a boil and then reduce to a simmer for 15-18 minutes or until fork tender. Let cool. 

  • Chop pickles, hard boiled eggs, and red onion and add to a large bowl. 

  • Once cooled, peel 3/4 of the potatoes and dice. 

  • Add to the bowl with mayo, pickle juice, mustard, and lawrys. Taste and adjust seasonings and enjoy! Cool in fridge before serving.
