Roasted Halibut with Pilaf
ROASTED HALIBUT w/ PILAF😍
Simple dinner in under 30 minutes, that tastes phenomenal, AND requires 5 ingredients? Yes please 😋 Omit the pilaf for a Whole 30 meal!
Makes 3-4 servings.
Ingredients:
For the Halibut:
1.5 lbs halibut
10 garlic cloves
2 large lemons
1/3 cup olive oil
Salt
Broccolini
For the Pilaf:
1 cup Uncle Ben’s rice
1/2 cup vermicelli (you can also sub for spaghetti and break into small pieces)
4 tbsps butter
2 cups chicken broth
Pinch of salt
Directions:
For the Pilaf:
Melt the butter in a small saucepan and add the vermicelli.
Toast the vermicelli under just starting to brown, then add the rice and coat with the butter.
Add a pinch of salt and pour in the chicken broth.
Bring up to a boil, and then cover and simmer for 15 minutes.
Turn off the heat and let sit for 5 minutes.
For the Halibut:
Slice the lemons and garlic into thin slices.
In a large roasting pan, add the lemons in a thin layer and top with the halibut.
Add the broccolini around the halibut.
Scatter the garlic all over the halibut and broccolini and drizzle everything with a good glug of olive oil.
Season all with salt and pepper.
Bake at 350 for 10-12 minutes depending on thickness or until the halibut flakes easily with a fork.
Remove the halibut and broccolini and return the pan to the oven on broil until some of the garlic is nice and toasty.
Top the halibut with the sauce from the pan and enjoy!
