Mussakhan

MUSSAKHAN😍

Who knew a dish made out of less than 5 ingredients could be such a flavor bomb in your mouth? This Palestinian dish is adapted from my friend’s mom’s recipe (thanks Mrs. Jarayseh) and is a great way to spice up your regular weeknight dinner. You’re gonna wanna make this one ASAP😍


Makes 4 servings.

Ingredients:

For the Mussakhan:

  • 4 bone-in skin-on chicken thighs

  • 4 chicken drumsticks

  • 2 red onions, halved and sliced thinly

  • 1-2 piece of taboon bread (you can also substitute for naan or any other thick flatbread)

  • ½ cup pine nuts

  • ⅓ cup olive oil

  • 3 tbsps Sumak (purple colored spice that has a nice lemony taste to it - you can find at Vons, Amazon, or a middle eastern grocery store)

  • 1 tsp cumin

  • 2 tsps salt



Directions:

For the Mussakhan:

  • In a large bowl, add in the chicken, onions, olive oil, sumak, cumin, and salt and mix well with your hands. Let marinate at least 30 minutes, preferably 2 hours if you have the time.

  • Preheat your oven to 375 and let your chicken come to room temperature.

  • On a large baking pan, scatter the onion slices and top with the chicken. Bake for 40 minutes and then broil for 4-5.

  • With 2-3 minutes left to go, add the flatbread to the oven to warm and crisp up a bit.

  • Serve the chicken and onions over the flatbread, ensuring to drizzle on the juices from the pan (that’s the best part ;) ). Scatter with the pine nuts and serve
