Makes 3-4 servings.
Ingredients:
For the Whole 30 Buffalo Drumsticks:
8 drumsticks
1 cup Frankās Red Hot Original Sauce (or similar compliant buffalo sauce)
½ cup ghee
½ tsp garlic powder
2 tbsps avocado oil
Salt and pepper
For the Whole 30 Ranch:
1 cup homemade mayo or whole 30 approved mayo
¼-½ cup almond or coconut milk (depending on how thick you like your ranch)
½ tsp dried parsley
½ tsp dried dill
½ tsp garlic powder
½ tsp onion powder
Pinch of cayenne (optional)
Directions:
For the Whole 30 Buffalo Drumsticks:
Salt chicken on a wire rack and stick in the fridge uncovered for 1-3 hours ideally. The salt will dry out the skin a bit which makes it crispy without the use of flour!
Remove from fridge and pat dry, allowing to come to room temperature while your oven preheats to 425 degrees.
Mix drumsticks with avocado oil, salt and pepper, and add to a wire rack lined baking sheet, ensuring to not crowd the pan.
Bake at 425 for 20 minutes, then flip and cook for 20-25 minutes more until browned on the outside and fully cooked through.
In a small saucepan, add the buffalo sauce, ghee, and garlic powder until melted.
Toss the chicken with the buffalo sauce in a large bowl, then add back to the wire rack and broil for 5-7 minutes.
Reserve the sauce and toss once more before serving.
For the Whole 30 Ranch:
Mix all ingredients together and refrigerate until using.
