Bacon Jalapeño Popper Dip

BACON JALAPEÑO POPPER DIP😍

SuperBowl Sunday is 6 days away and all I can think about is what I’ll be chowing down on for the big day. This dip packs the same major flavor you’d expect from a jalapeño popper, without the hassle of stuffing them. You’re gonna wanna make this ASAP! Crockpot and oven directions below!

*Tips: you can simplify this by not roasting the jalapeños beforehand, but I highly recommend doing so for a better texture in the dip. If you choose not to roast the jalapeños, reduce the amount by 2-3 jalapeños as fresh jalapeños tend to be spicier.

**You can also make this ahead and heat day of for added convenience.

 

Serves 7-9 as a snack.

Ingredients:

For the Bacon Jalapeno Popper Dip:

  • 16oz cream cheese

  • 1 package bacon (12oz)

  • 6-8 jalapeños 

  • 1 cup ranch

  • 1 cup Colby jack cheese

  • Ritz crackers to serve

Directions:

For the CrockPot Jalapeño Popper Dip:

  • Add jalapeños in a single layer to a baking sheet. 

  • Broil on high, rotating every few minutes until charred on all sides.

  • Transfer to tin foil and wrap, letting the steam start to peel off the skin.

  • Add bacon to a baking sheet in a single layer and bake on the lowest rack at 400 degrees for 15-20 minutes or until crisp. You can also pan fry.

  • Transfer to paper towels to drain the excess grease and chop into bite sized pieces.

  • Peel jalapeños and remove the seeds and stem. 

  • Chop into bite sized pieces and add to the crockpot along with the cream cheese, crumbled bacon, ranch, and shredded cheese.

  • Stir and cook on low for 1-2 hours until cheese is melted. 

  • Serve with Ritz or Wheat Thins and enjoy!

 

For the Baked Jalapeño Popper Dip:

  • Add jalapeños in a single layer to a baking sheet. 

  • Broil on high, rotating every few minutes until charred on all sides.

  • Transfer to tin foil and wrap, letting the steam start to peel off the skin.

  • Add bacon to a baking sheet in a single layer and bake on lowest rack at 400 degrees for 15-20 minutes or until crisp. You can also pan fry.

  • Reduce oven temperature to 350 degrees.

  • Peel jalapeños and remove the seeds and stem. 

  • Chop into bite sized pieces and add to a 9x9 baking dish along with the cream cheese, crumbled bacon, ranch, and shredded cheese.

  • Stir and bake at 350 degrees for 15-20 minutes or until cheese is melted. 

  • Serve with Ritz or Wheat Thins and enjoy!
