PEPPERMINT MOCHA😍

As soon as December hits, I can’t start my morning without a Peppermint Mocha in hand. It’s early, it’s cold outside, and I just wanna stay in my PJs sipping on a giant mocha without having to venture out to a coffee shop. Good news - it comes together in literally 5 minutes - less time it would take to even get your car warm. Get your robe on and some slippers, because I guarantee you will be sipping on this all month long.   • Coffee: My Nespresso is $100 off today! HELLO - I am obsessed with it - I use it every single day, and have rarely spent money on Starbucks since buying it. I have the Nespresso Citiz Espresso Machine and it’s perfect - not too big, so doesn’t take up too much counter space, and super quick so doesn’t take a lot of time even if I am making coffee for more than one person.

  • Capsules: I buy Peet's Nespresso Capsules from Costco. Cheaper than other places and I like the flavor variety.

  • Nespresso Capsule Organizer: this baby has been a life saver for keeping my capsules organized, while not taking up too much space. I can have my Nespresso machine on top and just pop in a capsule from the drawer before. Also on sale today!

  • Milk Frother: the KEY to having great coffees at home is being able to froth your milk. I use this one every single day: the Miroco Milk Frother. It’s great for heating and frothing at the same time, and even froths cold creamer for iced beverages!

  • Creamer: a good frothable creamer is key to having great coffee at home. Using almond milk or coconut milk doesn’t give that cappuccino froth that’s key for lattes. I switched to non dairy creamers a few years ago, and fell in love with NutPods while doing Whole30. Other great frothable creamers are oat milk, macadamia nut milk, and any of the non dairy creamers at Trader Joe’s. 


Ok… now back to why you’re all here: to make a great Peppermint Mocha from home!


Notes:

  • The peppermint mocha creamer makes enough for about 4-6 cups of coffee. It will keep in the fridge in an airtight container for about a week.

  • I’ve been loving adding collagen to my coffee - I feel like my skin feels smoother, my hair and nails grow faster, and it’s an easy thing to add to my routine. Adding a few scoops to the creamer itself allows me to skip the process of adding a scoop each time I make coffee - double win!

  • This tastes best with the creamer frothed, but if you don’t have a frother it also tastes great as is. I use my frother every single day and am obsessed. I linked it here.



Serves 4-6.

Ingredients:

For the Homemade Peppermint Mocha:

  • 2 cups nutpods, oat milk, or regular milk

  • 2 tbsps cocoa powder

  • 2-3 tbsps sugar

  • 1 tsp peppermint extract

  • ½ tsp vanilla extract

  • ⅛ tsp salt (brings out the sweetness)

  • 4 scoops collagen (optional)

  • 1 cup brewed coffee or a double shot of espresso

  • Coconut whipped cream because it’s December and we’re extra (optional)


Directions:

For the Peppermint Mocha:

  • Add milk to a small saucepan on medium heat. 

  • Once simmering, whisk in cocoa powder, sugar, salt, collagen, peppermint and vanilla extract until smooth and there are no more clumps.

  • Shut off heat and store in an airtight container until ready to use.

  • Per 1 cup of coffee or 2 shots espresso, froth ¼-½ of the peppermint mocha creamer and pour over coffee. Enjoy!
