Moroccan Roasted Carrots

MOROCCAN ROASTED CARROTS😍

Look - I get it, you’re wondering why you should get excited about a carrot recipe. But let me tell you - these aren’t just ordinary carrots. Not only are they incredibly easy to make, but they’re loaded with flavor, proving that your side dishes this holiday season should definitely not be just an afterthought. Combining the sweet, smoky carrots with the crunch of the pistachios and bite from the feta makes for the perfect bite that will have you craving seconds. You’re gonna love these!

 

Serves 3-4 as a side.

Ingredients:

For the Moroccan Roasted Carrots:

  • 1 lb whole carrots, washed

  • 2 tbsps olive oil

  • ½ tsp smoked paprika

  • ½ tsp cumin

  • ¼ tsp cinnamon

  • ¼ tsp black pepper

  • 2 tbsps honey + more for drizzling

  • ¼ cup chopped pistachios

  • ¼ cup crumbled feta

  • Salt to taste

 

Directions:

For the Moroccan Spiced Roasted Carrots:

  • Preheat your oven to 425 degrees.

  • Wash and scrub the carrots. Cut any extra large carrots in half lengthwise - you want each carrot to be approximately the same size.

  • Add carrots to a parchment paper lined baking sheet.

  • Add olive oil, honey, smoked paprika, cumin, cinnamon, pepper, and salt to carrots and mix with your hands to ensure each carrot is properly coated in the seasoning.

  • Roast in the oven at 425 for 18-20 minutes until tender.

  • Remove from oven, drizzle with more honey, and top with pistachios and feta. Serve and enjoy!
