Gambas Al Ajillo (Spanish Garlic Shrimp)

GAMBAS AL AJILLO (Spanish Garlic Shrimp)😍

Your summer vacation plans may be cancelled, but that doesn’t mean you can’t bring a taste of Spain into your kitchens this summer😍 Just 4 ingredients and 15 minutes are needed to recreate one of my favorite Spanish dishes, and it couldn’t be easier! And don’t forget to grab a big loaf of bread, because the bread dunk into the garlic sauce is what dreams are made of.

Serves 2-4 as an appetizer, 2 for a light dinner or lunch with a side salad.

Ingredients:

For the Gambas Al Ajillo (Spanish Garlic Shrimp):

  • 8 oz peeled and deveined shrimp

  • ½ cup olive oil

  • 8 cloves garlic, minced

  • 1 whole dried cayenne pepper (Found here. You can also substitute for ¼ tsp ground cayenne in a pinch)

  • Salt to taste

  • Baguette for dipping

Directions:

For the Gambas Al Ajillo (Spanish Garlic Shrimp):

  • Add olive oil, garlic, and whole cayenne pepper to a medium sized skillet and place on medium-high heat.

  • Once the garlic is sizzling, cook for 2-3 minutes, stirring frequently to ensure the garlic doesn’t burn.

  • Pat the shrimp dry with paper towels and season with salt just before adding to the pan in a single layer.

  • Cook for 2 minutes on medium high heat, then cover and reduce to medium-low for 7-8 minutes.

  • Serve immediately and dunk that baguette into the garlic sauce - KEY to living your best life with this dish.

My favorite way to serve these as it holds in heat well and is perfect for soups, stews, and other dishes:
