BUFFALO CHICKEN FLATBREAD😍

As soon as football season hits I turn into a fiend for anything buffalo chicken related, and this buffalo chicken flatbread is no exception😍 Super easy to put together, and a guaranteed hit among your friends, you’re gonna wanna make this ASAP!

Serves 3-4.

Ingredients:

For the Buffalo Chicken Pizza:

  • 1 cup shredded chicken

  • ¼ cup buffalo sauce (Sweet Baby Ray’s Buffalo Sauce preferred)

  • ¼ tsp garlic powder

  • 4 oz cream cheese

  • ¼ cup milk or milk alternative

  • 1½ cups shredded mozzarella cheese

  • 1 lavash bread (you can sub for flatbread as well)

  • 1 oz blue cheese (optional)

  • Extra buffalo sauce for drizzling

  • Ranch for drizzling

  • Green onions for topping (optional)

For Skinny Homemade Ranch:

  • ½ cup plain greek yogurt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp celery salt

  • 1 tsp dried parsley

  • ½ tsp dried dill

  • 1 tsp dried chives

  • 2-4 tbsps milk or non-dairy milk

Directions:

For the Buffalo Chicken Flatbread:

  • If you’re making your ranch homemade, combine the greek yogurt, garlic powder, onion powder, celery salt, dried parsley, dried dill, dried chives, and milk. For closer to a dip like consistency, use 2 tbsps of milk, or 3-4 tbsps for a more runny consistency. Refrigerate for at least 20 minutes to let the flavors combine.

  • In a separate bowl, mix together the shredded chicken, garlic powder, and ¼ cup buffalo sauce and set aside.

  • To make your white pizza sauce, add the cream cheese and milk to a small saucepan on medium heat. Whisk periodically for 2-3 minutes until the mixture is combined. Season with salt and pepper to taste.

  • Preheat the oven to 450 degrees and place your baking sheet in the oven to preheat.

  • On a piece of parchment paper, start assembling your pizza by spreading a thin layer of the white pizza sauce onto the lavash bread (you may not use all the sauce).

  • Sprinkle on top with 1 cup of mozzarella cheese, then add the buffalo chicken in a thin layer. Top with the rest of the mozzarella cheese.

  • Once the oven is preheated, carefully transfer the pizza onto the preheated baking sheet.

  • Bake on the bottom rack for 5-6 minutes, then broil the pizza on high for 1-2 minutes or until slightly browned and bubbly.

  • Drizzle the pizza with extra buffalo sauce, ranch, blue cheese, and green onions. Enjoy!
