Whole 30 Chicken Tortilla(less) Soup
WHOLE30 CHICKEN TORTILLA(less) SOUP😍
Anyone else realize how not ready they are for bikini season? 😅 my days of hiding pizza and cheese under a sweatshirt are coming to an end, and this is the perfect gateway to clean eating 🤤 basically just dump everything into a pot and you’ll have a super flavorful healthy dinner on the table in less than 30 minutes 😋
Makes 4 servings
Ingredients:
For the Whole 30 Chicken Tortilla(less) Soup:
1 large onion, chopped
1 jalapeño or chili pepper (keep the seeds to make it more spicy, or take them out for less heat)
2 cloves minced garlic
1 tbsp tomato paste
½ tsp Ancho Chili Powder (or regular chili powder)
½ tsp cumin*
1 can whole30 compliant fire roasted tomatoes (I like the ones from Thrive Market)
3 cups chicken broth (directions for homemade chicken broth here: https://www.rockinmealss.com/blog/2019/2/8/instant-pot-chicken-noodle-soup-with-homemade-instant-pot-chicken-bone-broth)
2 cups shredded rotisserie chicken (or 2 chicken thighs or breasts)
½ bag carrot spirals (you can find these in the fridge section at Trader Joe’s or spiralize your own)
Avocado and cilantro for topping (optional)
*Note: you can also substitute the chili powder and cumin for 1 tsp taco seasoning
Directions:
For the Chicken Tortilla(less) Soup:
Start by sautéing 1 onion in some olive oil in a dutch oven and season with salt and pepper on high heat.
After 1 minute, add in your jalapeño or chili pepper and set you heat to low, stirring occasionally for 5-7 minutes.
Add in garlic and tomato paste and cook for 1 more minute.
Add in chili powder and cumin and toast your spices for 1 more minute, ensuring they are well incorporated with the onions.
Add in fire roasted tomatoes, chicken broth, and shredded chicken and bring to a boil.
Once boiling, add in the bag of carrot spirals and simmer for 5-10 minutes until carrots are slightly soft but still have a bite to them.
Serve with avocado and cilantro and enjoy 🤤🤤
