Bruschetta Brie Pasta
BRUSCHETTA BRIE PASTA😍
One of my favorite recipes around the holidays is my family’s Bruschetta Brie Pasta. Not only is it festive in color, but it couldn’t be easier or faster to whip up. Perfect for a quick weeknight meal or as an easy side to your Christmas dinner, you’re gonna want to make this one ASAP!
Serves 2-3 as a main, 4-5 as a side.
Ingredients:
For the Bruschetta Brie Pasta:
10oz cherry tomatoes, sliced in half
5 oz brie cheese, cubed (no rind)
8oz gluten free spaghetti
¼ cup chopped fresh basil
1 tsp grated garlic or garlic paste
3 tbsps good quality extra virgin olive oil
1 tsp balsamic vinegar
Salt to taste
Directions:
For the Bruschetta Brie Pasta:
Bring a pot of salted water to boil. Once boiling, add your pasta and cook according to package directions.
In a large bowl, add cherry tomatoes, garlic, fresh basil, 2 tbsps olive oil, balsamic vinegar and a pinch of salt. Mix to combine.
Add the cubed brie on top.
Once the pasta is cooked, transfer the hot pasta directly from the pot to the bowl using a slotted spoon. Mix to combine - the brie will melt just slightly but the tomatoes will remain fresh.
Serve and enjoy! For leftovers, eat at room temperature, do not heat up pasta once assembled.
