Vegan Queso Dip

GAMEDAY QUESO DIP😍

It’s the day before SuperBowl, you have a Pinterest page full of recipes you’d love to make, but reality is your laziness is kicking in and the thought of spending all day in the kitchen cooking makes you wanna cry. Finally a recipe meat lovers and vegans can get on board with, and it couldn’t be easier! Just 3 Trader Joe’s ingredients get thrown together into a crockpot to form this creamy flavor bomb of a dip, just in time for gameday. Recipe for this vegan queso dip below!😍

Ingredients:

For the Crockpot Vegan Queso Dip:

  • 16 oz storebought vegan queso dip*

  • 12 oz soyrizo

  • 13 oz jar Cowboy Caviar (or any southwest style salsa - look for ones with black beans and corn)

  • Tortilla chips for serving (I like the Elote Corn Dippers from Trader Joes)

*I used to use the Trader Joe’s Cashew Fiesta Queso Dip for this recipe, but since it has been discontinued, I have used their white queso dip (not vegan), Chao Creamery, and Siete Foods brands and all work great!)

Directions:

For the Crockpot Vegan Queso Dip:

  • Add all ingredients to crockpot and mix to combine. 

  • Set to low for 1-2 hours until warm and melty. 

  • Serve with tortilla chips and enjoy!

Stovetop Method:

  • Mix all ingredients in a medium side pot and stir until combined.

  • Place the heat on low and cover, stirring often, and cook until warm and melty, about 15-20 minutes. Serve with tortilla chips and enjoy!
