MAMA’S MEATLOAF😍

To all those who can’t be with their moms or kids today, to the expecting mamas, those waiting to be moms, those who have lost moms, moms who have lost their children, and those with strained relationships with their moms or kids, your strength is incredible. Take the time today to make something special to your heart, because food has a magical way of transporting us to a memory, and bringing us a level of comfort when we can’t be with the ones we love. For me, that’s my mama’s meatloaf, simple and delicious on its own, made perfect by the memories it brings me. Tips:
If you have time, it’s beneficial to marinate the meat a bit before baking it.
To double this recipe, I recommend using 1 lb beef and 1 lb pork for a nice blend or textures and flavors.
Serves 3-4.
Ingredients:
For Mama’s Meatloaf:
1 lb ground beef (Look for 80-85% lean)
½ packet onion soup mix
½ cup shredded carrots
2 tbsps ketchup
2 tsp worcestershire sauce
1 tbsp dried parsley
1 tsp garlic powder
¾ cup Italian breadcrumbs
½ cup milk (you can use a milk substitute)
1 egg
Salt and pepper to taste (go a little lighter on the salt - the onion soup mix and worcestershire already have salt)
For the Topping:
⅓ cup ketchup
2 tsps worcestershire
1 tbsp brown sugar
Optional Sides:
Mashed potatoes, sweet potatoes, scalloped potatoes or baked potato

Directions:
For Mama’s Meatloaf:
In a large bowl, mix together the breadcrumbs, milk, egg, onion soup mix, ketchup, worcestershire sauce, dried parsley, garlic powder, and a pinch of salt and pepper until well combined.
Add the beef and carrots and mix through. Set aside to come to room temperature while your oven preheats to 350 degrees.
In a separate bowl, mix the ketchup, brown sugar, and worcestershire sauce.
Grease a loaf pan and add in the meat mixture.
Flatten it out to make it even, then top with the ketchup mixture and spread all around.
Bake uncovered at 350 degrees for 55 minutes.
Allow the meatloaf to rest 5-6 minutes before serving. Serve with desired sides and enjoy!
