One Pan Shrimp "Boil"
SHEETPAN SHRIMP “BOIL”😍
I have a hot date on the couch tonight with my 16 year old beagle, a glass of wine, and the entire cast of New Girl, which means I need a super easy dinner I can throw together in seconds. One pan meals are my FAV - who doesn’t love quick dinners and even quicker cleanup? Roasting in the oven instead of boiling leads to a flavorful smokiness you won’t want to miss out on!
Serves 3-4.
Ingredients:
For the Baked Shrimp “Boil”:
4 ears of corn on the cob, cut in half*
1 lb fingerling or yukon potatoes, sliced in half
½ lb shrimp
6 oz andouille sausage, sliced (optional)
¼ cup melted ghee or olive oil
1 tbsp old bay seasoning
1 tsp garlic powder
½ tsp smoked paprika
3 minced garlic cloves
Salt and pepper to taste
1 lemon, cut into wedges
*a trick for cutting corn on the cob is running your knife along the inside bone to start to score it, then use your hands to break it in half.
For the Optional Dipping Sauce (great for the corn and shrimp):
½ stick melted butter
Juice from 1 lime
Salt and pepper to taste
Directions:
For the One Pan Shrimp “Boil”:
Preheat the oven to 450 degrees.
In a bowl, mix together the melted ghee, garlic, old bay seasoning, garlic powder, smoked paprika, and salt and pepper to taste.
In a separate bowl, add the potatoes, corn, and sausage and mix with ¾ of the seasoned ghee.
Lay evenly onto a large sheetpan and roast for 15 minutes.
Toss the shrimp and remaining seasoned ghee. Add to the baking sheet and roast another 5-7 minutes.
In a serving bowl, add the melted butter, lime juice, salt and pepper.
Serve the shrimp “boil” with the dipping sauce and lemon wedges and enjoy!
