Fennel Arugula Salad

FENNEL ARUGULA SALAD😍

Everyone needs a good salad in their arsenal - perfect for hosting or a quick side to any weeknight dinner. Arugula is one of my absolute favorite lettuces to use - it’s peppery, it’s fresh, and it adds the perfect amount of brightness to compliment your main dish. Crunch from the fennel and walnuts, creaminess from the goat cheese, and sweetness from the pear and the balsamic vinaigrette, it’s the perfect balance of flavors.

Serves 2.

Ingredients:

For the Fennel Arugula Salad:

  • 2 cups arugula

  • ¼ cup thinly sliced fennel

  • ½ a pear, sliced

  • ¼ cup toasted walnuts 

  • Goat cheese for topping (optional)

For the Balsamic Vinaigrette:

  • 1 tsp dijon mustard

  • 1 tsp grated garlic

  • 1 tsp honey

  • 1 tbsp balsamic vinegar

  • 2 tbsps olive oil

  • Salt and pepper to taste


Directions:

For the Fennel Arugula Salad:

  • Add dressing ingredients to a jar with a tight fitting lid and shake until emulsified. You can also whisk in a bowl.

  • Assemble the salad by adding the arugula, pear, walnuts, fennel, and goat cheese to a large bowl. Pour over dressing just before serving (you may not use all the dressing) and toss with tongs. Enjoy!
