Chipotle Shrimp Tacos
CHIPOTLE SHRIMP TACOS😍
When cooking quick meals, shrimp is my secret weapon. It cooks up in 2-3 minutes and is SO incredibly versatile. These chipotle shrimpys get wrapped in a charred tortilla with creamy avocado mash, mango pico (store bought or homemade, no judgements here) and a flavor bomb chipotle mayo for a flavor packed meal that’s ready in less than 15 minutes. Y’all are gonna love this one!
Serves 1.
Ingredients:
For the Chipotle Shrimp Tacos:
2 corn or flour tortillas
6 large or 8 medium Shrimp
2 tsps avocado oil + 1 tbsp
¼ tsp ancho chili powder
¼ tsp garlic powder
¼ tsp smoked paprika
½ avocado, smashed
1 tbsp lime juice
Salt to taste
Chopped fresh cilantro for topping
Store Bought or homemade mango pico de gallo
For the Chipotle Mayo:
1 tbsp mayo
Juice from ½ lime
1 tsp adobo sauce (from a can of chipotles in adobo)
1-2 tsps hot sauce (I like Valentina)
Homemade Mango Pico:
¼ cup chopped mango
1 tbsp finely chopped red onion
1 tbsp fresh lime juice
2-3 slices jalapeno chopped
1 tbsp chopped fresh cilantro
Salt to taste
Directions:
For the Chipotle Shrimp Tacos:
To a bowl, add the shrimp, 2 tsps oil, chili powder, garlic powder, smoked paprika, and a pinch of salt and set aside to marinate for a few minutes while you prep the rest of your ingredients.
If you are making the mango pico homemade, add the red onion, lime juice, and a pinch of salt to a small bowl first to help mellow out the sharpness of the red onion. Then add in the mango, jalapeno, and cilantro and stir to combine.
Make the chipotle mayo by whisking the mayonnaise, adobo sauce, lime juice, hot sauce, and a pinch of salt.
Heat a skillet on medium high heat. Dry char your tortillas for 30-60 seconds per side and remove.
Add in your oil and the shrimp in a single layer. Cook for 1-2 minutes per side or until slightly charred on both sides.
Smash some avocado onto your tortillas and squeeze over a little lime juice and a pinch of salt.
Top with the shrimp, mango pico, and chipotle mayo. Serve immediately and enjoy!
For meal prep, keep each component separate and assemble right before eating.
