Meal Train Dinners
As many of you all know, food is my love language, and cooking something for loved ones is my go to way of being helpful in times of need. I wanted to compile a list of recipes that are great for dropping off to new parents, to families that have lost a loved one, or to anyone in my life that could use a comforting meal. When doing so, I wanted to pick recipes that would be great for meal prep, most freeze really well, are easy to make, and just taste really great!

Meal Train Dinners:
There’s nothing more comforting than a Pot Roast Dinner, and this one just takes a few minutes of hands on time and then your slow cooker or oven does the work for you!
There’s a reason this Tortellini Soup is a fan favorite and one of my favorite soups ever. This will probably be the first recipe to go, and lasts about 4-5 days in the fridge (if it even makes it that long). The tortellini does not freeze well, so if you do plan on freezing it, I recommend making the soup without it and the tortellini can be added separately.
This has been a meal prep favorite of mine for years, it makes a huge batch and is just such a crowd pleaser. All they have to do is cook pasta or spaghetti squash whenever they’re ready to eat this and spoon the bolognese on top - SO good.
This soup is chock full of veggies, anti-inflammatory properties, and uses a homemade chicken stock to add tons of flavor and nutrients. It’s one of my favorite soups to serve because it truly shocks people with how good it is, myself included!
For when you’re sick of soups, Carnitas save the day. SO many different ways to serve them - in tacos, on salads, in enchiladas - for a fresh and fun meal!
Although not freezer friendly, these enchiladas taste so good they won’t make it that long anyway. One of my favorite vegetarian meal prep options!
Especially for new parents, mornings can be super hectic, and having breakfast prepped can be a game changer. The soyrizo adds a major flavor punch here and the oven does most of the work - win win!
To this day I say this is one of the most underrated recipes on the blog. The spices add SO much flavor to the lentils which pairs so well with the coconut milk.
One of my favorite crockpot meals, it’s truly a set it and forget it recipe. The stew freezes well, but the mashed potatoes not so much, so if you do plan on freezing this, just skip the potatoes and make those day of.
We all need something to curb our sweet tooth, and these paleo cookie dough bites hit the spot. Can be kept in the freezer and pulled out to snack on - the best!
There’s a reason why curries are so popular for meal prep, because they taste even better the next day. Keep the rice separate and combine once heated.
For those who don’t want to spend all day meal prepping, this one is for you. Using storebought shortcuts to make your life easier but never lacking in flavor.
