Salmon Tacos w/ Cilantro Lime Slaw
SALMON TACOS w/ CILANTRO LIME SLAW
I could eat these tacos every day of my life - they have no business being this good and they couldn’t be easier! The sauce doubles as a dressing for the slaw and is the PERFECT sauce drizzle to pull it all together. You’re going to love these!!
Serves 2.
Ingredients:
For the Salmon Tacos w/ Cilantro Lime Slaw:
2 salmon filets
1 tbsp olive oil
1 tsp chili powder
½ tsp smoked paprika
½ tsp onion powder
½ tsp garlic powder
Salt to taste
4 corn or flour tortillas
¼ cup corn
2 tbsps cotija cheese
For the Cilantro Lime Slaw:
¼ cup plain Greek yogurt
Handful cilantro
3-4 cloves garlic
1 green onion
1-2 slices jalapeno or serrano (optional)
¼ cup lime juice
2 tbsps olive oil
Salt to taste
¼ tsp cumin
2 cups coleslaw mix
Directions:
For the Salmon Tacos w/ Cilantro Lime Slaw:
Preheat the oven to 400 degrees.
Place the salmon on a baking sheet, drizzle with olive oil and season with chili powder, smoked paprika, onion powder, garlic powder, and salt.
Bake at 400 degrees for 12 minutes or until it flakes easily.
Meanwhile, add greek yogurt, cilantro, garlic, jalapeno or serrano, lime juice, olive oil, cumin, and a pinch of salt to a blender and blend until smooth.
Add the coleslaw mix to a bowl and toss with a bit of the sauce. Taste and adjust for seasoning. Reserve the rest of the sauce for serving.
Toast your tortillas in a dry skillet for 30-60 seconds until warm. Flake the salmon into bite sized pieces. Add slaw to the tortillas with the salmon, corn, cotija, and a drizzle of sauce. Serve and enjoy!
