Panko Pesto Salmon
Sometimes in life you need those stupidly simple recipes in your arsenal so you can shut your brain off and know you’re going to have something tasty and healthy and this recipe is it. You only need 4 ingredients and 12 minutes to throw this together, and it tastes great with just about everything. I love it with some pilaf and a salad, baked sweet potato and veggies, or even as a side to some pasta it’s just SO good. Easily customizable to be gluten free and dairy free, you’re going to love this one!
Notes:
You can use homemade pesto for this recipe or choose storebought. Gotham Greens has a great dairy free pesto if you want to make this dairy free, otherwise I always love the one from Costco.
Gluten free panko breadcrumbs work just as well as regular in this and can be found at Whole Foods or most major grocery stores, just make sure you use panko and not regular breadcrumbs or the texture won’t be the same.

Ingredients:
For the Panko Pesto Salmon:
3 tbsps pesto (I like Costco or Gotham Greens brand)
⅓ cup panko breadcrumbs
2 salmon filets
2 tsps dijon mustard
Salt and pepper to taste
Lemon juice to top (optional)
Directions:
For the Panko Pesto Salmon:
Preheat the oven to 400 degrees.
Place a piece of parchment paper on a baking sheet and add your salmon filets. Pat dry with a paper towel and season with salt and pepper.
Using a pastry brush or the back of a spoon, spread the dijon mustard over both filets.
Add the pesto and panko breadcrumbs to a small bowl and mix until combined. Top the salmon filets with the pesto panko mixture, pressing down to get the panko to stick to the salmon.
Bake the salmon at 400 degrees for 12-14 minutes or until it flakes easily.
Air Fryer Method: preheat your air fryer, then cook at 380 degrees for 9-10 minutes or until it flakes easily. Cooking times will vary depending on the thickness of your salmon/brand of air fryer.
Season with a little lemon juice and serve with rice, pasta, or sweet or baked potato and veggies and enjoy!
