Homemade Ahi Tuna Poke Bowls
HOMEMADE AHI TUNA POKE BOWLS
The perfect lunch for when you’re running around like a maniac on a Sunday to get everything done by Monday! And with Ahi Tuna being on sale at @sprouts wayyy cheaper than buying a poke bowl anywhere else and way more delicious!
Ingredients:
For the Sushi Rice:
¾ cup sushi rice (I used Sanpatong sweet rice)
¼ cup rice vinegar
1 tbsp sugar
1 tsp salt
For the Sriracha Mayo:
1 tbsp sriracha (I used Yellowbird Sriracha)
1 tbsp mayonnaise (I used Kewpie)
For the Ahi Tuna Poke:
1 lb sushi grade ahi tuna or salmon
2 chopped scallions (greens and whites)
¼ cup soy sauce
1 tbsp rice vinegar
1-2 tbsps sesame oil
1 tbsp sriracha
1 tbsp sriracha mayo (see below)
Directions:
For the Sushi Rice:
Place unrinsed sushi rice into a rice cooker with 1 cup water.
Cook on the white rice setting (you can also use your instant pot or stove).
Meanwhile, mix rice vinegar, sugar, and salt in a bowl.
Microwave for 20 seconds to dissolve the sugar.
Once the rice is cooked, drizzle with seasoned vinegar and set aside to cool.
For the Sriracha Mayo:
Mix together sriracha and mayo and taste to adjust
For the Ahi Tuna Poke:
Cut tuna or salmon into chunks and place into a bowl.
Add in scallions, soy sauce, rice vinegar, sesame oil, sriracha, and half the sriracha mayo.
Let marinate at least 10 minutes
Start assembling your bowl! Place your sushi rice into a bowl and drizzle with a little of soy sauce and the rest of the sriracha mayo. Top with Ahi Tuna Poke and add sliced cucumbers, avocado, or whatever else you choose! (My fav is to add a bit of fried garlic on top😍🤤)
