Whole30 Blackened Salmon with Zucchini

In my house, Sundays are for meal prepping. Which means when it comes to actually making something for dinner on Sunday, I don’t want to spend anymore time cooking. Enter, BLACKENED SALMON with zucchini 😍 so delicious, so healthy, and so easy!


Ingredients:

Blackened Salmon

  • 2 salmon fillets

  • 1-2 tbsp Coconut Oil (or any other oil with a high smoke point)

  • 1-2 tbsps Blackened Seasoning (this makes more than you need for this recipe, but you’ll use it a lot!):

    • 1 tbsp paprika

    • 1 tbsp smoked paprika

    • 1 tbsp Ancho Chile powder

    • 1 tbsp garlic powder

    • 1 tsp celery salt

    • 1 tsp white pepper

    • 1 tsp cayenne

    • 1 tbsp salt


Zucchini

  • 2-3 medium sized zucchini

  • Olive oil

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1 tsp Trader Joe’s Mushroom Umami Seasoning (optional but highly recommended)


Instructions:

Blackened Salmon:

Optional: score your salmon by cutting little slits into the salmon flesh (helps to season the inside and helps cook it faster). Sprinkle the blackened seasoning onto the salmon. Sear skin side up in a cast iron with a little coconut oil for about 2-3 min on high and then flip and sear for about 5 min on the other side. Depending on how thick your salmon is, you may need to turn it to low with a lid to cook the middle.


For the Zucchini:

Preheat oven to 450 degrees. Cut zucchini into half moons. Place on a baking sheet and spray with olive oil spray and sprinkle with salt, pepper, garlic, powder, and Trader Joe’s Mushroom Umami seasoning on both sides. Roast for about 8-12 minutes, flipping halfway through.
