Mustard Aioli Salmon with Zucchini Salad
MUSTARD AIOLI SALMON WITH ZUCCHINI SALAD 😍
Kickin off the first Trader Joe’s Tuesday with a recipe that’s as easy as it is flavorful 🙌🏽 I’m at Trader Joe’s legit 40% of my waking hours because it makes my life sooo much easier as a working adult (questionable title there) who’s on a budget, but still trying to get a healthy meal on the table quickly. Probably wouldn’t recommend this for meal prep, but let’s be real there won’t be leftovers anyway😉
Serves 2.
Ingredients:
For the Baked Salmon:
2 salmon filets
3 tbsps Trader Joe’s Aioli Garlic Mustard Sauce (my cousin put me on this and I legit drink it)
For the Zucchini Salad:
2 large zucchinis
1 cup frozen roasted corn, defrosted
1 cup halved cherry or grape tomatoes
1/2 cup feta cheese
1/4 cup chopped basil
3 tbsps olive oil
Juice from 1 large lemon
1 tbsp balsamic vinegar
Salt and pepper
Directions:
For the Mustard Salmon and Zucchini Salad:
Preheat the oven to 425 degrees. Season the salmon with salt and pepper and coat with the mustard using a brush or the back of a spoon.
Place the frozen roasted corn in a bowl to come to room temperature.
Cut zucchini into half moons and season with olive oil, salt, lemon pepper, and garlic powder.
Add the salmon to a baking sheet and bake for 12-14 minutes depending on the thickness, or until it flakes easily. With 8 minutes to go on the salmon, add the zucchini to the sheetpan, as it will cook faster than the salmon..
Once zucchini is tender, add to a bowl with corn, halved tomatoes, feta and basil. Drizzle with 2 tbsps olive oil, lemon juice, balsamic vinegar, and salt and pepper and toss.
Serve the salmon with the zucchini salad and enjoy!😋😋
