Whole30 Blackened Snapper with Avocado Cauliflower Rice

Day 2 of Whole 30 is going extremely well given dinner tastes this good. The creaminess of the avocado counteracts the kick to the blackened snapper and IT. IS. GOLD. On Whole 30 or not, you gotta make this ASAP!
Makes 2 servings.
Ingredients:
For the Blackened Snapper:
2 filets of Red snapper or your favorite fish
Avocado oil
Salt
2 tbsps Blackened Seasoning (this makes more than you need for this recipe, but you’ll use it a lot!):
1 tbsp paprika
1 tbsp smoked paprika
1 tbsp Ancho Chile powder
1 tbsp garlic powder
1 tsp celery salt
1 tsp white pepper
1 tsp cayenne
For the Avocado Cauliflower Rice:
2 cups cauliflower rice
Garlic powder
½ mashed avocado
1 tbsp ghee
1 lime
Few sprigs of cilantro, chopped
Serves 2
Directions:
For the Blackened Snapper:
Season snapper all over with blackened seasoning and salt and press into the fish.
Get a cast iron skillet really hot and add in some avocado oil.
Add in the fish and sear for 2-3 minutes per side or until it flakes easily.
For the Avocado Cauliflower Rice:
Add ghee to a separate hot pan and add the cauliflower rice without stirring until you start to see some charring. Then stir and cook for about 2 minutes more.
Mash the avocado, lime juice, salt and garlic powder and add in chopped cilantro.
Add in the cauliflower rice and stir.
Serve the snapper with the cauliflower rice and enjoy!
