Roasted Halibut with Pilaf

ROASTED HALIBUT w/ PILAF๐Ÿ˜

Simple dinner in under 30 minutes, that tastes phenomenal, AND requires 5 ingredients? Yes please ๐Ÿ˜‹ Omit the pilaf for a Whole 30 meal!

 

Makes 3-4 servings.

Ingredients:

For the Halibut:

  • 1.5 lbs halibut

  • 10 garlic cloves

  • 2 large lemons

  • 1/3 cup olive oil

  • Salt

  • Broccolini

 

For the Pilaf:

  • 1 cup Uncle Benโ€™s rice

  • 1/2 cup vermicelli (you can also sub for spaghetti and break into small pieces)

  • 4 tbsps butter

  • 2 cups chicken broth

  • Pinch of salt

 

 

Directions:

For the Pilaf:

  • Melt the butter in a small saucepan and add the vermicelli. 

  • Toast the vermicelli under just starting to brown, then add the rice and coat with the butter. 

  • Add a pinch of salt and pour in the chicken broth. 

  • Bring up to a boil, and then cover and simmer for 15 minutes. 

  • Turn off the heat and let sit for 5 minutes. 

 

For the Halibut:

  • Slice the lemons and garlic into thin slices. 

  • In a large roasting pan, add the lemons in a thin layer and top with the halibut. 

  • Add the broccolini around the halibut. 

  • Scatter the garlic all over the halibut and broccolini and drizzle everything with a good glug of olive oil. 

  • Season all with salt and pepper. 

  • Bake at 350 for 10-12 minutes depending on thickness or until the halibut flakes easily with a fork. 

  • Remove the halibut and broccolini and return the pan to the oven on broil until some of the garlic is nice and toasty. 

  • Top the halibut with the sauce from the pan and enjoy!
