PAN TUMACA (Pan Con Tomate)😍
Been having some major Spain withdrawals lately since I got back from my trip, and eating this classic toast with tomato and jamón dish for breakfast has been giving me life all week 🙌 Super simple and a great way to switch up your breakfasts for the week 😋
I love to prep the tomatoes and ingredients separately and just toast the bread at work for a simple, minimal prep way to have breakfast all week!
Makes 4 servings.
Ingredients:
For the Pan Tumaca:
2-3 medium sized tomatoes (the best quality you can find, the pearl on the vine tomatoes from Trader Joe’s work great here!)
Baguette or ciabatta loaf
1 garlic clove, halved
Salt
Good quality Extra Virgin Olive Oil
Spanish Jamón (or prosciutto if you can’t find it or omit for a vegetarian breakfast)
Directions:
For the Pan con Tomate:
Grate the tomatoes with the large side of a box grater.
Slice bread in half and toast.
Drizzle each slice of toast with 1-2 tbsps of good quality olive oil and rub all over with a halved garlic clove.
Spoon over the tomatoes, season with salt and top with jamón. Enjoy!
