BACON WAFFLES
Okay, I know bacon and waffles doesn’t necessarily sound like something you would put together yourself, but trust me on this, it’s exactly what your waffles have been missing! This beautiful marriage between foods was something my mom came up with, and I haven’t been able to eat waffles another way.
Both my mom and me aren’t big fans of having sweets in the morning, and we both like our waffles the same way - thin and crispy - so much so that we spent weeks searching for a waffle iron that makes thin and crispy waffles, not Belgian style (trust me, this was harder than it sounds). We finally found one at a garage sale that was probably 10 years old (now closer to 20), but it makes perfectly thin and crispy waffles that are to die for. Seriously, my friend found out I was making bacon waffles and immediately started driving to my house.
Are these healthy? No, but will these kick off your weekend in the best way? Absolutely. You’re gonna wanna make these ASAP!
Ingredients:
For the Bacon Waffles:
1 package thick bacon
2 cups Bisquick baking mix
1 ⅓ cups milk
2 eggs
2 tbsps reserved bacon fat
Directions:
For the Bacon Waffles:
Start by crisping up your bacon in a pan on medium heat.
Once crispy, add to a paper towel lined plate to drain some of the oil.
Crumble the bacon into larger sized bits.
Pour the bacon fat into a glass and let cool. Set aside.
Grease your waffle iron, and heat it up to a medium-high heat.
Make your batter by combining the Bisquick mix, eggs, milk, and bacon fat.
Once your waffle iron is hot, scoop 2-3 scoops of the batter (depending on the size of your waffle iron) into the middle of your waffle iron and sprinkle your crumbled bacon bits on top.
Close the lid to your waffle iron, and cook for about 5 minutes until golden brown.
Preheat your oven to 200 degrees to keep the waffles warm until you have finished all of the waffles.
Serve with maple syrup for that perfect salty sweet bite 😋
