Berbere Sheetpan Chicken
BERBERE SHEETPAN CHICKEN😍
Proof you don’t need to spend all day in the kitchen to keep you from eating a sad lunch at your desk all week. If you haven’t tried Berbere, it’s a smokey flavor packed spice blend typically found in Ethiopian cooking and is the quickest way to turn any ingredient into a flavor bomb. Make this for a quick weeknight dinner or for delicious meal prepped lunches all week long.
Serves 4.
Ingredients:
For the Berbere Sheetpan Chicken:
4 bone in, skin on chicken thighs
Berbere spice blend:
1 tbsp Berbere (can be found on Amazon)
1 tbsp smoked paprika
2 tsps garlic powder
2 tsps pepper
2 tsps celery salt
2 tsps salt
¼ cup olive oil
2 lbs of yukon gold potatoes (about 2 small potatoes per person)
Broccolini or your favorite vegetable
Directions:
For the Berbere Sheetpan Chicken:
Preheat your oven to 425 degrees.
In a bowl, mix together chicken with 1 tbsp olive oil and half the berbere spice blend until well coated.
Rinse and cut potatoes into uniform bite sized pieces.
Line a sheet pan with some foil and add the chicken thighs, potatoes and broccolini.
Drizzle 1 tbsp olive oil on the broccolini and season with salt and pepper.
Drizzle the rest of your olive oil on the potatoes and season with the remaining spice mix.
Bake for 40-50 minutes until the skin is crispy and the chicken is cooked through and enjoy!
