Berbere Sheetpan Chicken

BERBERE SHEETPAN CHICKEN😍

Proof you don’t need to spend all day in the kitchen to keep you from eating a sad lunch at your desk all week. If you haven’t tried Berbere, it’s a smokey flavor packed spice blend typically found in Ethiopian cooking and is the quickest way to turn any ingredient into a flavor bomb. Make this for a quick weeknight dinner or for delicious meal prepped lunches all week long.


Serves 4.

Ingredients:

For the Berbere Sheetpan Chicken:

  • 4 bone in, skin on chicken thighs

  • Berbere spice blend:

  • 1 tbsp Berbere (can be found on Amazon)

  • 1 tbsp smoked paprika

  • 2 tsps garlic powder

  • 2 tsps pepper

  • 2 tsps celery salt

  • 2 tsps salt

  • ¼ cup olive oil

  • 2 lbs of yukon gold potatoes (about 2 small potatoes per person)

  • Broccolini or your favorite vegetable


Directions:

For the Berbere Sheetpan Chicken:

  • Preheat your oven to 425 degrees.

  • In a bowl, mix together chicken with 1 tbsp olive oil and half the berbere spice blend until well coated.

  • Rinse and cut potatoes into uniform bite sized pieces.

  • Line a sheet pan with some foil and add the chicken thighs, potatoes and broccolini.

  • Drizzle 1 tbsp olive oil on the broccolini and season with salt and pepper.

  • Drizzle the rest of your olive oil on the potatoes and season with the remaining spice mix.

  • Bake for 40-50 minutes until the skin is crispy and the chicken is cooked through and enjoy!
