Sheetpan Pork Chops
SHEETPAN PORK CHOPS😍
If you also spent all day watching football and dropped the ball a bit on meal prep, this one’s for you. Flavor bomb of a sheet pan dinner, so you can spend more time this Sunday perched in front of your TV than your stove. You’re gonna wanna make this Whole30 meal ASAP 😋
Makes 4 servings.
Ingredients:
For the Sheetpan Pork Chops with Sweet Potato and Apple:
4 1” thick pork chops
1 large sweet potato, peeled and cubed
1 red onion, sliced thinly
1 apple, cored and sliced
1/3 cup Whole30 compliant Dijon mustard
4 whole garlic cloves (skin on)
2 tbsps olive oil
Pinch of paprika
1 tsp garlic powder
1 tsp Ancho chile powder (or your favorite spice blend)
Salt and pepper
Directions:
Add sweet potatoes, onion, apple, and garlic to a lined sheet pan and drizzle generously with olive oil. Season with salt, pepper, garlic powder, and ancho Chile powder.
Roast at 450 degrees for 12 minutes.
Remove from the oven and reduce the temperature to 400.
Add the pork chops on top of the veggies and season salt and pepper. Brush the dijon mustard onto both sides.
Top with a pinch of paprika and return to the oven for another 10–14 minutes or until cooked through (a little pink in the middle is perfect - about 7 minutes per 1/2” pork chop)
