Sheetpan Pork Chops

SHEETPAN PORK CHOPS😍

If you also spent all day watching football and dropped the ball a bit on meal prep, this one’s for you. Flavor bomb of a sheet pan dinner, so you can spend more time this Sunday perched in front of your TV than your stove. You’re gonna wanna make this Whole30 meal ASAP 😋



Makes 4 servings.

Ingredients:

For the Sheetpan Pork Chops with Sweet Potato and Apple:

  • 4 1” thick pork chops

  • 1 large sweet potato, peeled and cubed

  • 1 red onion, sliced thinly

  • 1 apple, cored and sliced

  • 1/3 cup Whole30 compliant Dijon mustard

  • 4 whole garlic cloves (skin on)

  • 2 tbsps olive oil

  • Pinch of paprika

  • 1 tsp garlic powder

  • 1 tsp Ancho chile powder (or your favorite spice blend)

  • Salt and pepper


Directions:

  • Add sweet potatoes, onion, apple, and garlic to a lined sheet pan and drizzle generously with olive oil. Season with salt, pepper, garlic powder, and ancho Chile powder. 

  • Roast at 450 degrees for 12 minutes. 

  • Remove from the oven and reduce the temperature to 400. 

  • Add the pork chops on top of the veggies and season salt and pepper. Brush the dijon mustard onto both sides. 

  • Top with a pinch of paprika and return to the oven for another 10–14 minutes or until cooked through (a little pink in the middle is perfect - about 7 minutes per 1/2” pork chop)
