Whole30 Smothered Pork Chops

CARAMELIZED ONION PORK CHOPS😍

Whenever the weather gets a tad bit cold, I go HAM on comfort food, which typically doesn’t do me any favors when trying to stay healthy. These quick weeknight Caramelized Onion Pork Chops are the healthy comfort food we all need right now! Ultra creamy yet dairy-free, with a luscious gravy that pairs well over anythingggg. You’re gonna love this!


Serves 2-3.

Ingredients:

For theWhole30 Smothered Pork Chops:

  • 3-4 boneless pork loin chops

  • 1 small onion, sliced thinly

  • 4 cloves garlic, minced

  • 1 tbsp ghee

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • ½ tsp paprika

  • 2 tbsps dijon mustard

  • 1 cup chicken broth

  • ¼ cup dairy free creamer (I like Nutpods)

  • Salt and pepper to taste

Directions:

For the Caramelized Onion Pork Chops:

  • Remove pork from the fridge to come to room temperature.

  • Heat a cast iron or wide high sided skillet on medium-high heat. Drizzle in olive oil.

  • Season pork chops with salt and pepper and add to the skillet. It should be hot enough that you hear a sizzle when you add the pork chops.

  • Cook for 3-4 minutes per side or until golden brown on both sides. Remove from the skillet.

  • Add the ghee and onions with a pinch of salt and pepper. Sauté for 2-3 minutes on medium high, stirring frequently until just starting to soften.

  • Add in the vinegar and scrape up the browned bits in the bottom of the pan.

  • Reduce the heat to medium and cook the onions for 15-20 minutes, stirring occasionally, until soft and browned.

  • Add in the garlic and Dijon mustard and cook, stirring frequently for 30-60 seconds.

  • Add in the broth and bring to a boil. Boil for 2-3 minutes or until the sauce has reduced slightly.

  • Reduce heat to medium low and stir in the dairy-free creamer.

  • Add back in the pork chops with the juices and cover and simmer until cooked through, about 3-5 minutes.

  • Serve with mashed potatoes and your favorite veggie and enjoy!
