Crispy Chicken with Creamy Mustard Sauce (Whole30)

CRISPY CHICKEN WITH CREAMY MUSTARD SAUCE😍

Don’t you love it when a healthy weeknight meal looks fancy and tastes indulgent? Yeah, same. This Whole30 friendly meal comes together in no time, and is sure to impress whoever is sitting at your dinner table tonight. You’re gonna wanna make this ASAP!

Serves 3-4:

Ingredients:

For the Chicken with Creamy Mustard Sauce:

  • 4 bone in, skin on chicken thighs

  • 2 tbsps avocado oil

  • 2 shallots, sliced

  • 2 cloves garlic, minced

  • 1 tbsp stone ground mustard

  • 1 tbsp dijon mustard

  • ½ cup white wine (or chicken broth for Whole30)

  • ¼ cup unflavored nutpods or similar non-dairy creamer

  • Salt and pepper to taste

Serving Suggestions:

  • Mashed Potatoes (Recipe here)

  • Mashed Cauliflower (I buy mine frozen)

Directions:

For the Whole30 One Pan Chicken with Creamy Sauce:

  • Cut the bone out of the chicken thighs with kitchen shears (or ask your butcher to do this for you).

  • Pat the chicken dry and season with salt and pepper.

  • Heat a cast iron on high heat, then add the avocado oil.

  • Place chicken skin side down and sear for 8-10 minutes without touching until crisp and golden brown.

  • Flip and cook 2-3 more minutes, then remove from the pan.

  • Pour out all but 2 tbsps of the remaining grease and add in the shallots on medium heat. Saute for 2 minutes, then add the garlic and cook for 1 more minute.

  • Add the stone ground and dijon mustard and stir until well combined.

  • Pour in the wine or chicken stock and cook on high for 1 minute.

  • Reduce the heat to low, add the Nutpods or creamer and stir.

  • Add back in the chicken thighs and simmer 2-3 minutes until the sauce has slightly thickened.
