Lobster Pasta All'Amatriciana

LOBSTER PASTA ALL’AMATRICIANA😍

Sometimes self care is drinking a glass of wine in your bathtub listening to Nora Jones and sometimes it’s cooking up a big batch of lobster pasta because you deserve it. Cancel your dinner plans and enjoy a 5 star meal from the comfort of your own PJs😍

 


Makes 2-3 servings.

Ingredients:

  • 6 oz Trader Joe’s frozen langostino tails (basically a cross between lobster and shrimp)

  • 6 oz bucatini or spaghetti (fresh would be awesome but you can use dry)

  • 1 can crushed tomatoes (San Marzano works best)

  • 3 cloves garlic, sliced thinly

  • 4 oz package of pancetta (the Trader Joes one comes bite sized, but you can also cut your own bacon or thick pancetta into bite sized pieces)

  • A few sprigs of fresh basil

  • Fresh oregano, or 1 tsp dried oregano

  • Salt and pepper

 


Directions:

  • Heat up some olive oil in a skillet on medium-high heat, and add in the pancetta. Cook for 3-4 minutes or until it gets some color.

  • Add garlic and chili flakes and toast for 1 minute.

  • Deglaze the pan with white wine and cook out for 2-3 minutes or until the liquid has reduced.

  • Add in the can of crushed tomatoes and herbs and stir. Add in the langostino tails and reduce to a simmer for 20 minutes.

  • Meanwhile, get a pot of salted water up to a boil and add in the pasta. Cook 1 minute less than package instructions, or until al dente (it should still have a bit to it). Reserve ½ cup of the pasta water and drain the pasta (do not rinse!!).

  • Add the pasta to the sauce and stir. Add pasta water if needed to reach the desired consistency.

  • Serve with some more chili flakes and fresh basil on top, pour yourself a glass of wine and enjoy!
