Lobster Pasta All'Amatriciana
LOBSTER PASTA ALL’AMATRICIANA😍
Sometimes self care is drinking a glass of wine in your bathtub listening to Nora Jones and sometimes it’s cooking up a big batch of lobster pasta because you deserve it. Cancel your dinner plans and enjoy a 5 star meal from the comfort of your own PJs😍
Makes 2-3 servings.
Ingredients:
6 oz Trader Joe’s frozen langostino tails (basically a cross between lobster and shrimp)
6 oz bucatini or spaghetti (fresh would be awesome but you can use dry)
1 can crushed tomatoes (San Marzano works best)
3 cloves garlic, sliced thinly
4 oz package of pancetta (the Trader Joes one comes bite sized, but you can also cut your own bacon or thick pancetta into bite sized pieces)
A few sprigs of fresh basil
Fresh oregano, or 1 tsp dried oregano
Salt and pepper
Directions:
Heat up some olive oil in a skillet on medium-high heat, and add in the pancetta. Cook for 3-4 minutes or until it gets some color.
Add garlic and chili flakes and toast for 1 minute.
Deglaze the pan with white wine and cook out for 2-3 minutes or until the liquid has reduced.
Add in the can of crushed tomatoes and herbs and stir. Add in the langostino tails and reduce to a simmer for 20 minutes.
Meanwhile, get a pot of salted water up to a boil and add in the pasta. Cook 1 minute less than package instructions, or until al dente (it should still have a bit to it). Reserve ½ cup of the pasta water and drain the pasta (do not rinse!!).
Add the pasta to the sauce and stir. Add pasta water if needed to reach the desired consistency.
Serve with some more chili flakes and fresh basil on top, pour yourself a glass of wine and enjoy!
