Pineapple Jerk Chicken Tostadas
PINEAPPLE JERK CHICKEN TOSTADAS😍
I love meal prepping one thing at the beginning of the week and using it as a base for different recipes, it makes it A LOT more fun to meal prep. With this, I took the pineapple chicken I made for the Green Bean Salad (recipe here -> https://www.rockinmealss.com/blog/2019/7/15/lemonade-copycat-pineapple-chicken-green-bean-salad) and turned it into a delicious tostada with a little island twist. Enjoy! 😍
Makes 4-5 servings.
Ingredients:
2 boneless skinless chicken breasts**
1 ½ cups pineapple juice
2 tbsps jerk seasoning
2 tsps garlic powder
Juice from 1 lime
Salt
1 can black beans (I like the Cuban style black beans from Trader Joe’s)
½ tsp cumin
1 large avocado
1 cup shredded mozzarella (optional)
4-5 tortillas (I love Siete Foods almond flour tortillas)
Hot sauce
Makes about 4-5 tostadas
Directions:
Add chicken, pineapple juice, jerk seasoning, half the garlic powder, and a pinch of salt to your InstantPot*** and set to high for 15 minutes, allowing it to naturally release for 10. Shred with 2 forks.
Drain and reserve the juices from the can of black beans and add to a bit of oil in a skillet on medium-high heat. Cook for about 6-7 minutes, occasionally stirring and mashing the beans, slowly adding back the juice from the can as the beans get dry. Season with cumin and cook for 1 more minute.
In a bowl, mash the avocado with lime juice, salt, and a little more garlic powder.
In a separate skillet, heat up some avocado oil on medium high and add your tortillas one at a time. Cook 2-3 minutes per side or until just beginning to get golden brown and crisp.
Start layering your tostadas! Start with refried black beans, add a little cheese, then avocado mash, finally topping with the pineapple shredded chicken and your favorite hot sauce and enjoy!.
**You can also substitute for rotisserie chicken, just let the shredded rotisserie chicken marinate in the pineapple juice, jerk seasoning, garlic powder, and salt for 30 minutes.
***For the crockpot, set to high for 3-4 hours or low for 7-8.
