Portuguese Eggs

“Portuguese Eggs” 😍

My mom used to make these for me as an easy breakfast to go and they always remind me of my childhood. I always meal prep 5-6 of these at the beginning of the week and they’re usually gone by Monday, so trust me when I say, double or triple this recipe 😍

 

For those wondering about the title, my mom always told the story that she was introduced to this recipe by her friend’s mom who was Portuguese, and always assumed they were Portuguese eggs, so that’s what we called them. Fast forward 15 years later as I’m trying to look up the recipe - the only thing that I’m finding is “Scotch eggs” that look awfully similar to what I grew up on. So there it is, technically these are inspired by scotch eggs, but my family has been calling them Portuguese eggs for so long that there’s no going back

 

Makes 3 servings.

Ingredients:

  • 1 package Jimmy Dean (to make this Whole 30, you can use compliant sausage)

  • 6 eggs

  • ½ cup breadcrumbs (omit for Whole30)

 

Directions:

For the medium boiled eggs (you can also use hard boiled):

  • Bring a pot of water to a simmer (small bubbles, not a quick boil). Gently add the eggs and cook for seven minutes. Transfer to an ice bath to let cool.

  • Peel the eggs and let dry.

  • Cut the sausage into 6 equal pieces and flatten out each piece into a circle. Wrap the sausage around the egg until completely sealed and coat with breadcrumbs.

  • Transfer to a baking sheet and bake at 375 for 30 minutes until browned. Enjoy!
