Homemade Pumpkin Spiced Latte

My favorite Coffee Essentials:

Fun fact: I didn’t start to like coffee until a few years ago, and a big reason for that was having the right ingredients and equipment (and having to start work at 7:30am😂). Below are a few of my favorite tools to making the best coffee in the mornings to start my day off right. 

  • Coffee: My Nespresso is $100 off today! HELLO - I am obsessed with it - I use it every single day, and have rarely spent money on Starbucks since buying it. I have the Nespresso Citiz Espresso Machine and it’s perfect - not too big, so doesn’t take up too much counter space, and super quick so doesn’t take a lot of time even if I am making coffee for more than one person.

  • Capsules: I buy Peet's Nespresso Capsules from Costco. Cheaper than other places and I like the flavor variety.

  • Nespresso Capsule Organizer: this baby has been a life saver for keeping my capsules organized, while not taking up too much space. I can have my Nespresso machine on top and just pop in a capsule from the drawer before.

  • Milk Frother: the KEY to having great coffees at home is being able to froth your milk. I have two: The PowerLix Handheld Frother - super affordable (only $14) and works great - I just heat my nutpods in my mug, then stick in the frother to froth the milk before adding in my coffee. I also have another one that’s a great dupe for the Nespresso frother and half the pric: the Miroco Milk Frother. It’s great for heating and frothing at the same time, and even froths cold creamer for iced beverages!

  • Creamer: a good frothable creamer is key to having great coffee at home. You’ll find that just using almond milk or coconut milk won’t work to get that cappuccino froth that’s key for lattes. I switched to non dairy creamers a few years ago, and fell in love with NutPods while doing Whole30, which is a combo of almond milk and coconut milk. It’s also what I use in this recipe. They have many different flavors, but I love it most for it’s frothing ability. I also like that they are unsweetened, so I can add sweetener if I want to, but most of the time just have it plain. Other great frothable creamers are oat milk, macadamia nut milk, and any of the non dairy creamers at Trader Joe’s.

Ingredients:

For the Homemade Pumpkin Spiced Latte*:

  • ¼-⅓ cup canned pumpkin (based on preference for how strong of a pumpkin flavor you like - used ¼ for iced)

  • ½ tsp pumpkin pie spice

  • 1½ cups NutPods (can sub for Macadamia Nut Milk or Oat Milk if not on Whole30/Paleo)

  • 3 tbsps maple syrup (optional - skip for Whole30)

  • 2 shots espresso or ½ cup brewed coffee

*Note: Depending on how much creamer you put in your coffee, you’ll have enough for about 5-7 cups of coffee. You can store the creamer in a lidded jar in the fridge. It will thicken once it’s cool, so be sure to heat for 30 seconds before adding to your coffee.

Directions:

For Homemade Pumpkin Spiced Latte:

  • Heat the canned pumpkin, maple syrup (if using), and pumpkin pie spice on low heat in a small saucepan. Cook for 7-8 minutes, stirring frequently, until deepened in color.

  • Pour in the NutPods and mix well. Cook for an additional 30 seconds to a minute on low.

  • Store the creamer in an airtight jar in the fridge. It will keep for 1 week.

  • To make your latte, heat up ¼ - ½ cup creamer in a frother or mug. Use a handheld frother or blender to froth the creamer.

  • Pour over hot espresso or coffee, top with an additional sprinkle of pumpkin pie spice and enjoy!
