MOROCCAN ROASTED CARROTS😍

Serves 3-4 as a side.

Ingredients:

For the Moroccan Roasted Carrots:

  • 1 lb whole carrots, washed

  • 2 tbsps olive oil

  • ½ tsp smoked paprika

  • ½ tsp cumin

  • ¼ tsp cinnamon

  • ¼ tsp black pepper

  • 2 tbsps honey + more for drizzling

  • ¼ cup chopped pistachios

  • ¼ cup crumbled feta

  • Salt to taste

 

Directions:

For the Moroccan Spiced Roasted Carrots:

  • Preheat your oven to 425 degrees.

  • Wash and scrub the carrots. Cut any extra large carrots in half lengthwise - you want each carrot to be approximately the same size.

  • Add carrots to a parchment paper lined baking sheet.

  • Add olive oil, honey, smoked paprika, cumin, cinnamon, pepper, and salt to carrots and mix with your hands to ensure each carrot is properly coated in the seasoning.

  • Roast in the oven at 425 for 18-20 minutes until tender.

  • Remove from oven, drizzle with more honey, and top with pistachios and feta. Serve and enjoy!
