When it comes to appetizers, sweet and savory is the name of the game. Probably the longest title ever for a recipe, but for good reason as every ingredient in this recipe bounces off each other to create the most incredible flavor bomb in your mouth. A show stopping appetizer for Christmas, and one that will have your family raving well into the new year. You’ve gotta make this one!

- Chop bacon into bite sized pieces and add to a cold skillet. Place on medium high heat. Cook until crisp, about 5 minutes. With 1 minute to go, add in the rosemary. Remove bacon and rosemary and drain on paper towels.
- Remove all but 1 tbsp of bacon fat from the skillet and return to medium heat. Add the shallots with a pinch of salt and pepper and cook until soft and just starting to caramelize, about 5-7 minutes.
- While the shallots cook, add the goat cheese, greek yogurt, 2 tbsps olive oil, honey, salt and pepper to a blender or food processor. Blend, slowly streaming in the water 1 tbsp at a time until smooth. Transfer to a serving bowl and drizzle over a bit of olive oil.
- Once shallots are soft, shut off the heat and stir in the fig jam about 30 seconds until warmed through.
- Add the shallot fig jam mixture on top of the whipped goat cheese and top with the bacon and rosemary. Serve with crostini and enjoy!
