Steak with Twice Baked Potatoes

STEAK with TWICE BAKED POTATOES😍

Nothing like a classic Sunday dinner of steak and potatoes taken up a notch. Twice baked potatoes is one of my favorite things in the world, and we’re all a bit in need of some healthier comfort food right now anyways right? You’re gonna wanna make this ASAP!

Ingredients:

For the Steak:

  • 2 NY Steaks or Sirloin Steaks

  • Salt and pepper to taste

  • 1 tbsp avocado oil

  • 2 tbsps butter

  • 2 cloves unpeeled garlic (optional)

  • Rosemary or other herb (optional)

For the Twice Baked Potatoes:

  • 1 large russet potato

  • 1 tbsp oil

  • 3 tbsps greek yogurt

  • 3 tbsps cream or Nutpods original creamer

  • 2 tbsps melted butter

  • ½ cup spinach

  • 1 garlic clove, minced

  • 2 strips cooked bacon, crumbled

  • ⅓ cup shredded cheddar cheese + more for topping

  • Salt and pepper to taste

Directions:

For the Steak and Twice Baked Potatoes:

  • Preheat the oven to 400 degrees. Scrub the potato with oil and season with a pinch of salt and bake for 1 hour. (You can also microwave if you’re pressed for time)

  • With about 15 minutes to go with the potatoes, cook off your bacon in a skillet until crisp.

  • Remove all but 1 tbsp bacon fat from the pan, and add in the spinach and minced garlic with a pinch of salt. Cook for 2-3 minutes on medium until wilted. Let cool and set aside with the bacon.

  • Add greek yogurt, cream, melted butter, spinach, and bacon to a bowl.

  • Once the potato is cooked, cut in half and let cool for 2-3 minutes. Reduce oven temperature to 350 degrees.

  • Then scoop out the filling from the potato, leaving a little bit of border in the skin, and add to the bowl.

  • Mix through and add the cheese. Season with salt and pepper to taste.

  • Add the potato skins to a baking sheet and fill with the potato mixture and top with more shredded cheese.

  • Bake for 15-20 minutes until cheese is melted.

  • Now, work on your steak. Get a cast iron nice and hot and add in the avocado oil.

  • Pat dry the steak and season with salt and pepper, then add to the pan.

  • Sear for 3-4 minutes on high or until you get a nice crust, then flip and sear on high another 1-2 minutes. Add the butter, rosemary, and garlic and baste for 2 minutes or so until medium rare, depending on the thickness of your steak.

  • Set aside to rest for 5 minutes before serving.

  • Serve with the twice baked potato and enjoy!
