Steak with Roasted Sweet Potatoes
STEAK WITH ROASTED SWEET POTATOES😍
Hands up if you are in need of a meal so good it makes you do a happy dance🙋🏾♀️🙋🏾♀️🙋🏾♀️ The perfectly seared filet is obviously the star of the show, but honestly these roasted sweet potatoes are a close second. Perfectly crisp yet tender, you’re gonna wanna make this ASAP😍
Serves 2.
Ingredients:
For the Steak:
2 filets or your favorite steak
2-3 tbsps ghee
Salt and pepper to taste
For the Roasted Sweet Potatoes:
1 large sweet potato
2 tbsps coconut, avocado, or olive oil
½ tsp garlic powder
½ tsp paprika
Salt and pepper to taste
For the Side Salad:
1 tsp grated garlic
1 tsp Dijon mustard
Juice ½ lemon
2-3 tbsps balsamic vinegar
2-3 tbsps olive oil
2 cups spring lettuce
1 avocado
Cherry tomatoes
Directions:
For the Roasted Sweet Potatoes:
Preheat the oven to 425.
Rinse and scrub the sweet potatoes and cut into ½” slices.
Mix the sweet potatoes with oil, paprika, garlic powder, salt and pepper.
Lay them on a parchment paper lined cookie sheet.
Roast for 30-35 minutes or until tender. Do not open the oven door and do not flip! Important for optimal crispiness.
For the Steak:
Get a cast iron pan really nice and hot and then add the ghee.
Pat the filets really nice and dry then season with salt and pepper on both sides.
Sear on high for 4-5 minutes untouched until a nice crust has developed. Flip and cook for 2-3 more minutes on medium high depending on thickness.
Remove from pan and set aside to rest for 3-5 minutes.
For the Side Salad:
In the bottom of a bowl, whisk the garlic, Dijon mustard, lemon juice, balsamic vinegar, olive oil, and salt and pepper.
Add the lettuce and avocado and toss to combine.
Serve with the steak and sweet potato slices and enjoy!
