Coconut Lime Mojito
COCONUT LIME MOJITOS😍
Just because you can’t go anywhere this weekend doesn’t mean you can’t bring some major tropical vibes to your home. This coconut mojito is creamy, zingy, limey, basically ALL THE GOOD THINGS. And if you close your eyes and let that sun coming in through your window hit your face just right, you MAY just feel like you’re on a real vacation. Tips before you start:
This drink is not overly sweet, but if you are sensitive to sweetness, you can omit the sugar since the Malibu has sugar. However, I do like using the sugar when muddling the mint and lime juice, as it acts as an abrasive and helps release the flavors of the mint.
I don’t usually get particular with brands to use in my recipes, but for this particular recipe I highly recommend using Chaokoh brand canned coconut milk - it is thick and creamy but doesn’t separate like other brands of canned coconut milk. If you use a different brand of canned coconut milk, just make sure to shake well so there is no separation between the coconut water and coconut cream.
When you add the club soda, the mojito will get a slight foam at the top due to the coconut milk. Also depending on the coconut milk brand you use, you may see some separation in the drink. This is to be expected - just give it a good stir and keep drinking!
Serves 1.
Ingredients:
For the Coconut Lime Mojitos:
2 oz Malibu coconut rum
1 lime
8 mint leaves
1 tsp sugar
2 tbsps canned coconut milk
Club soda for topping
Ice
Directions:
For the Coconut Mojitos:
In the bottom of a glass or cocktail shaker, add the lime juice, sugar, and mint and muddle with a muddler or wooden spoon for a few seconds to release the flavors of the mint.
Add the Malibu rum, coconut milk, and ice and shake until cold.
Pour over more ice in a serving glass and top with club soda.
Stir with a straw and enjoy!
